What is decaf coffee?

 

Decaf coffee has always been coffee, except that the caffeine in its composition has been removed almost entirely. This is also the meaning of “decaffeinated” in English, abbreviated as “decaf”. Friedlieb F. Runge – a German chemist – is considered a veteran expert with caffeine experiments. As early as 1820, he succeeded in separating caffeine from coffee beans.

From that foundation, in 1906, Ludwig Roselius – a businessman selling coffee – patented the first commercial process to create the complete decaf coffee.

The initial decaffeination process involves steaming the beans with various acids or bases, and then using benzene as a solvent to remove the caffeine. Coffee decaffeinated in this way was sold under the name Kaffee HAG (Kaffee Handels Aktien Gesellschaft company). However, due to health concerns related to benzene (a confirmed carcinogen), this method was soon withdrawn.

Although no longer used today, most modern methods of decaffeination work in a similar way, in that instead of using the solvent benzene, the scientists used organic solvents such as liquid CO2, Swiss Water.
