The process of harvesting Tanzania coffee
Harvest time in Northern Tanzania is usually from July to December. As the white flowers fall, berries appear. This process takes place throughout the growing season, so the coffee is in different grades. The eggplant seeds are round, from green to red. When the standard sugar content is reached, it will be ready to harvest.
Harvesting is usually done by women, who focus on harvesting mature beans on the entire tree in the coffee plantation.
After harvesting, coffee is selected and put into a separator to remove the skin and mucus layer, and then soaked in water tanks (according to the wet preliminary method – a common method here). This process promotes fermentation, creating the very unique flavors of each cultivated coffee variety.
The coffee beans at the end of the fermentation process are dried until the required moisture is reached; then it is batched, packed, preserved and delivered to reputable exporters and roasters.
