“Hack” SSP burrs for mid range home grinders

Whether you own mid-range grinders like the DF64 or Fellow Ode, or thousand-dollar machines like the Lagom P64 or Weber EG-1, know one thing: the grinder’s motor is really just the “legs” doing the spinning task. The real entity that “cuts” the coffee beans and determines the flavor is the pair of steel burrs inside. By simply upgrading to SSP burrs, you can make a 10 million VND machine deliver flavor quality on par with 30-40 million VND models.

SSP is what? And the “Red Speed” armor

If you join forums like Reddit’s r/espresso, you will constantly hear the three letters SSP. In fact, SSP (SSP Grinding Solution) is a custom machine shop in South Korea founded by expert Hansung Lee. They specialize in redesigning the geometry of teeth grooves on flat burrs, turning them into super sharp surgical knives.

Most SSP burr sets have an extremely characteristic dark red color called Red Speed. That is completely not decorative paint.

This coating brings two formidable physical powers:

  • Anti heat generation: The super smooth surface helps minimize friction when cutting beans. Coffee powder will not heat up, fully retaining delicate fruit flower ester aromas.
  • Eternal durability: The TiAlCN layer pushes burr lifespan up to 4000 to 5000 kg of coffee. To make it easy to imagine, if every day at home you brew 2 cups (about 36g), it will take you… over 300 years to wear out this burr set.

SSP Burrs Upgrade

This coating Red Speed is one of the factors helping SSP become the reference standard of many high end grinders in the Specialty Coffee community.

Choosing Multi-Purpose (MP) vs Lab Sweet (LS)

Replacing SSP burrs is not simply buying the most expensive type, but you must choose a teeth shape suitable for your drinking taste. Based on the extremely thorough analysis of expert Lance Hedrick in the video “The Ultimate 64mm Flat Burr Grinder Guide“, these are the 2 most famous burr “profiles” that you need to know:

SSP Multi-Purpose (MP) highlights clarity

This burr set is designed according to extreme Unimodal (one peak) standard. The teeth are bevelled razor sharp to only “cut” without producing any fine particles (fines). Lance Hedrick asserts SSP MP brings flavor note separation at a “microscope” level. It is the ultimate weapon for extremely light roast Pour-over beans, or Turbo Shot technique. However, it eliminates almost completely the body thickness. Your Espresso cup will be watery and pure like a cup of tea.

SSP Cast / Lab Sweet (LS) increases sweetness

Modelled after the burr geometry of the legendary Ditting 804 from Switzerland. Instead of being bevelled razor sharp, the teeth grooves are cast slightly rounded to rub beans. This intentionally creates a small amount of fine particles (slightly Bimodal direction) but is controlled extremely well. True to the name “Lab Sweet”, this burr set pushes the sweetness of coffee to the maximum level, bringing a silky body texture.

SSP Burrs Upgrade

The trend of buying a strong motor but cheap grinder (like DF64) then “modding” the SSP Cast LS burr set is precisely the most discussed combo on Reddit. Searching with the keyword “Is SSP worth it on DF64” on r/espresso, you will see hundreds of responses confirming this combo is extremely “forgiving” when brewing, perfect for those who want to drink both iced milk Espresso and juicy Pour over without sharp sourness.

To learn about the “alignment” step

Important warning: You cannot just unscrew the bolts, drop a 5 million VND burr set into the grinder, and call it a day. If the two burr carriers are not absolutely parallel (off by even the width of a hair), one side will cut large particles while the other grinds them into fine sand. Your upgrade money will go down the drain.

To solve this, you must perform the Marker Test technique. This technique was systematized by expert Matt Perger (from Barista Hustle), and you can visually watch it via the video “Grinder Burr Alignment” on the channel The Real Sprometheus.

How to perform it at home:

1. Use a marker pen to blacken the entire flat edge surface of both the top and bottom burrs.

2. Install the burrs into the machine, slowly turn the grind size adjustment dial finer until you hear the two burrs lightly touch (chirping), and turn the grinder by hand for a few rotations.

3. Disassemble to inspect: If the ink layer is rubbed off and 100% wiped clean in a perfect circle, congratulations, your burrs are perfectly aligned.

4. If the ink is only scratched on one side (meaning the burr carrier is tilted), you must cut ultra-thin pieces of aluminum foil (from kitchen foil – Shimming) and insert them under the burr base at the unrubbed ink angle to elevate it until balanced.

5. Repeat the process continuously (Apply ink -> Rotate -> Inspect -> Shim) until the ink layer is wiped off evenly across the entire surface.

SSP Burrs Upgrade

Burr alignment is considered a mandatory step when replacing burrs, as particle size distribution quality depends on both burr design and absolute parallelism between the two burr carriers.

In a coffee grinder, the burrs are the soul, while the machine is merely the body. In grinder research, we have concluded that Flat Burrs are the ultimate lens to fully uncover the complete flavor spectrum of expensive Specialty beans. Instead of spending tens of millions of dong continuously swapping machines to chase trends, investing in a solid baseline grinder, upgrading its “heart” with SSP burrs, and manually aligning them yourself represents the pinnacle of a scientifically minded Home Barista.

You’ll get the extraction efficiency and flavor clarity of an expensive, lab-grade setup, all at a price point that makes sense for a smart consumer.
