Like many flavor colors in Coffee Taster’s Flavor Wheel, Green/Vegetative is a new and tricky color to follow. Because it is not separate and easy to identify but overlaps and blends.
In the series of articles on taste perception in coffee, we will focus on exploiting the most and concretizing the scents on the flavor circle. In this article, we will develop more about green flavors in coffee with the Green/Vegetative group.

This group of flavors has a rather specific branching of leaves, botanicals and flavor palettes.
The green veggie flavor usually comes from the underdeveloped roasting process or the low quality of the coffee beans and sometimes from problematic brewing properties. To check if the Green/Vegetative flavor comes from the green kernel or underdeveloped coffee roasting, roast the sample coffee darker and see if the flavor persists.
Brewing water can play an essential role in creating the flavors of this group. If the green taste in your cup is particularly unpleasant, take a moment to review the quality of the water with its mineral content.

Light olive oil flavor but buttery, sweet but still a bit bitter.

This subcategory branched out into the flavors and aromas characteristic of a garden. This category includes the attributes of plants and vegetables as a salad.
Peapod
This is a combination of raw and earthy notes, lightly sweet.
Under-ripe
These notes describe the fruit as being green, often with a raw taste.
Fresh
You will imagine yourself as lost in a forest early in the morning, with freshness and comfort. This is a slightly sweet, slightly pungent note of freshly cut grass. However, it often creates a feeling of refreshment for the rewarder.
Dark green
Kale is the most accurate description of this category. Bitter, dusty and musty are all descriptions for these flavor notes.
Vegetative
Parsley and spinach are two great reference points for Vegetative notes, generally slightly bitter and sour.
Hay-like
A dry and dusty scent, along with earthy notes, is the description of this note.
Herb-like
Herb-like notes evoke the aromas and flavors found in the spices you have tasted and used—a little sweet, pungent and mild. Thyme and basil are recognizable flavor spots.
