The truth about high-quality specialty coffee

 

Specialty coffee is no longer a strange beverage. What is your first impression? Handcrafted, distinctive taste or professional demeanor? What is the truth of high-quality specialty coffee?

Specialty coffee definition

The term specialty coffee was coined by industry pioneer Erna Knutsen in 1974. Then the Specialty Coffee Association of the United States was founded in 1982 with 42 members. They were dubbed as those who “tried to bring the coffee business back to its roots”.

In a 2017 article, the association’s then chief executive officer, Ric Rhinehart, defined Specialty coffee as follows: “At the green stage, the coffee is free of primary defects, free from scum, and is dried. the right size, presented in a cup free of bugs and crumbs. They have special attributes and must be able to pass facet grading and tasting tests.”

To be more specific, Specialty coffees are coffees that have scored between 80 and 100 on the standardized scorecard. That scorecard is graded by a panel of coffee-tasting experts – the SCA.
