Sidra
Sidra, also known as Sydra or Bourbon Sidra, is a rare and mysterious Arabica variety believed to originate from Pichincha Province, Ecuador.
Its beans are long and slender, similar to Gesha, and the variety performs well at elevations between 1,650 and 2,100 meters in Ecuador and Colombia. In the cup, Sidra can be delicate, floral, and peach-like when washed, or more intense and layered with guava, starfruit, cinnamon, and chocolate when processed as anaerobic natural.
Alongside Gesha and Sudan Rume, Sidra has become increasingly prominent in competitions such as the World Barista Championship, reinforcing its status among the world’s leading specialty coffee varieties.
