Cauvery
Cauvery (commonly known as Indian Catimor) is an Arabica hybrid widely grown in India’s key coffee regions. It crosses Caturra (a flavorful, high-yielding Bourbon mutation) with Hibrido de Timor (a naturally disease-resistant strain).
Inheriting the best traits of its parentage, Cauvery is resilient, easy to cultivate, and thrives in India’s warm, high-altitude climates. It yields uniformly ripe cherries and large beans that produce a smooth, accessible cup featuring mild acidity, berry notes, subtle caramel sweetness, and a pleasant finish.
With exceptional disease resistance ensuring stable yields and a balanced flavor profile enjoyed by many, Cauvery has become a defining representative of premium Indian Arabica, increasingly making its mark in the global specialty coffee scene.
