Yellow Bourbon
Yellow Bourbon is an Arabica coffee variety from the Bourbon lineage, distinguished by its excellent cup quality and stable yield.
One of the most recognizable characteristics of this variety is its yellow cherries when ripe, as opposed to the typical red, along with rounder fruit and larger mature leaves compared to Typica. Yellow Bourbon tends to reveal its best flavor attributes when grown at elevations above 1.000 meters, especially when paired with careful cultivation, harvesting, and post-harvest processing.
This variety is commonly found in renowned coffee-growing regions from East Africa to Latin America. In East Africa, Yellow Bourbon thrives in ideal conditions, producing pronounced acidity and complex flavor notes. In Latin America, it is often grown under shade, allowing the cherries to ripen evenly and enhancing their sweetness.
