Weiss is a coffee delivery method that involves using a small needle or similar tool to agitate the coffee grounds in a portafilter, preparing them for espresso extraction.

This technique, known as the Weiss Delivery Technique (WDT), was developed by John Weiss in 2005 to address the problem of lumps in ground coffee, especially when using smaller grinders.

By evenly distributing the coffee grounds, WDT helps prevent channeling, where water flows through gaps in the coffee bed, resulting in uneven extraction. This method therefore enhances uniformity, improves extraction efficiency, and contributes to a more balanced espresso flavor. Today, many baristas use WDT to optimize espresso quality.
