French Roast is one of the darkest levels of Dark Roast, just slightly lighter than Italian Roast. The beans are removed from the roaster after the second crack at around 240°C (464°F), resulting in a deep brown, oily surface, with an intense bitterness, smoky aftertaste, and almost no acidity.

This roasting style is commonly used for beans from Brazil, Colombia, and Robusta varieties, producing a consistent flavor profile. It is well-suited for brewing methods like Espresso, French Press, and Vietnamese phin coffee. French Roast is particularly popular on the West Coast of the United States, where bold, dark coffee flavors are preferred.
