Italian Roast is the darkest level of coffee roasting within the Dark Roast category, reaching approximately 245°C (473°F), beyond the second crack. It is particularly popular in Southern Italy. This is also the final stage of roasting—any further, and the coffee beans would burn to ash rather than develop another roast level. At this point, the beans take on a deep, glossy appearance due to their natural oils. The flavor is intensely bitter, with almost no remaining fruity notes or acidity.

Robusta beans from Vietnam, India, Indonesia, and Brazil are often used in Italian Roast to reduce acidity and enhance bitterness. This makes them an excellent choice for strong espresso or bold coffee blends.
