Sorting
Sorting is the process of screening green coffee beans based on size, weight, and color after processing to ensure uniform quality. This step removes defective beans, selecting only those that meet the required standards before packaging and export.
Premium-grade beans typically have a screen size of 15 or above, allowing for a more consistent roasting process and a well-balanced flavor in brewing. Sorting also plays a key role in pricing and classification, as larger, more uniform beans are valued higher than smaller or lower-quality ones.
