Prewetting is the process of wetting coffee grounds before extraction, commonly used in manual brewing methods like Pour-over, AeroPress, and Espresso. When a small amount of water is poured over the surface of the ground coffee, CO₂ from freshly roasted beans is liberated, allowing the water to absorb more evenly and improving the extraction.

For Espresso, prewetting allows water to gently come into contact with the coffee grounds before pressure increases, reducing the risk of uneven flow and promoting more stable extraction. In pour-over brewing, this process—also known as blooming—helps the coffee grounds expand evenly, optimizing flavor development.

Additionally, prewetting can also refer to wetting the paper filter before brewing, which removes any papery taste and creates the ideal conditions for the brewing process.
