Natural process
The Natural Process, also known as the Dry Process, is a coffee processing method in which whole coffee cherries are dried with their skins intact under direct sunlight. After harvesting, the cherries are sorted to remove unripe ones and then spread out on patios or raised drying beds for even drying.
This process helps the coffee absorb flavors from the fruit’s skin during the drying period, creating distinctive flavor characteristics such as fruity notes, floral aromas, and natural sweetness. Coffee processed using the natural method often has a strong flavor, full body, and low acidity.
This method is favored in arid regions such as Ethiopia or Brazil, where drying coffee is effective without the need for complex equipment.
