Fragrance refers to the aroma of dry coffee grounds, emerging before water is added and reflecting the initial scent characteristics. Freshly roasted coffee typically has a more pronounced fragrance compared to aged coffee.

Fragrance helps identify distinctive aromatic notes and assess consistency across multiple cups of the same sample. This is the first step in cupping, laying the foundation for subsequent evaluations.
