City roast is a medium roast level, classified under Medium roast, performed just after the first crack of the coffee bean.

Coffee beans roasted at this level have a smooth texture and a mild flavor, retaining many natural characteristics, often with fruity notes, natural acidity, and a gentle aroma. When roasted to a medium level, the beans typically have a soft structure and a light flavor, preserving much of the natural qualities of the coffee. This roast level can be relatively divided into three stages: City roast is part of the Medium roast group, lying between Light roast (Cinnamon roast) and Dark roast (Full city, Vienna, French, Italian roast).

Currently, this roasting level is becoming a popular trend, especially in the third wave of coffee and was once the standard in Northern Europe. Typical flavors include sourness, caramel, sweetness (if roasted well), along with floral and fruity aromas. But in the process of roasting not reaching the desired level, it can appear grassy, ​​lemony and tart.
