Axit Carboxylic
Axit carboxylic are organic compounds in which a carbon (C) atom is bonded to an oxygen (O) atom via a double bond and to a hydroxyl group (―OH) via a single bond.
This compound plays an important role in creating the acidity of regular coffee. Acids such as citric, malic and acetic are often present, but are not clearly distinguished. The roasting and processing of coffee will directly affect the concentration and type of acid in coffee.
