Astringency
Astringency is the sensation of dryness, tightness and shrinkage in the mouth, a tactile rather than a taste sensation.
This sensation is caused by polyphenol compounds such as tannins, which interact with proteins in saliva, leading to precipitation and the formation of clumps. This results in the tightening and constricting feeling that is experienced. A moderate level of astringency can add complexity to coffee, but excessive astringency can make the coffee unpleasant. Astringency is also found in many other foods and beverages, such as tea, red wine, and unripe fruit.
