Giling Basah (Wet-Hulled) is a coffee processing method widely used in Indonesia, adapted to its humid climate. Unlike the Washed process, coffee beans in Giling Basah are hulled while still moist (30-35% moisture content) and then dried further to about 12%, significantly shortening the processing time.

This method produces coffee with a heavy body, low acidity, and a lingering aftertaste, often characterized by flavors of brown sugar, molasses, dark chocolate, roasted nuts, and subtle spices. When executed properly, it results in a complex and well-rounded cup profile.

Giling Basah allows for faster drying, making it suitable for Indonesia’s climate. However, if not carefully managed, the beans can become contaminated or over-fermented, negatively affecting their quality.
