Dark Room Drying is a modern and unique coffee drying method. Instead of drying directly under natural sunlight as traditionally done, ripe coffee cherries are placed inside a fully enclosed dark room.

Here, automated machinery regulates cool temperatures and continuously dehumidifies to extract moisture from the coffee cherries very slowly. “Hiding” in the dark prevents the coffee beans from losing their natural flavors through evaporation caused by the harsh heat of the sun.
